As in the ancestral local culinary - and social - traditions, the families who have the means prefer to keep the saffron a few years before using it. For that, darkness, dryness and a sufficient degree of air-tightness while storing are necessary. The Saffron is thought to become more refined and desirable. Using such saffron is also thought as a mark of distinction.
With curing, saffron undergoes a light and subtle fermentation process, and its aroma become much deeper, very tannic, with a color that becomes a deep vibrant dark burgundy.
This is a culinary delicacy, prized locally, and by many gourmet clients and chefs abroad. But some also people prefer the younger threads, and the experience is a bit different (so always a good idea to try a small quantity before ordering a bigger one).

Like all quality aromatics, saffron evolves. We try to manage our stocks so as to to be able to offer for the connoisseurs (or the curious) the possibility to experience these remarkable nuances.
